Quick and Easy:Tindora fry

What you will need 1 lb tindora,ends removed and sliced lengthwise 1 tbsp oil 1 tsp mustard seeds pinch of hing 1 tsp turmeric powder 1 tsp chili powder 1 tbsp coriander-cumin powder salt to taste What you need to do Heat oil in a heavy bottomed pan.When hot add mustard seeds and hing. After the mustard seeds splutter,add the turmeric,chili powder,coriander-cumin powder,and salt.Mix and cook for 30 secs. Add the sliced tindora,cover and cook for 15 mins on a medium low flame.Stir frequently. Serve hot with rice or roti.

Mushroom Masala

What you will need 1 packet mushroom,cleaned and chopped 1 medium onion,finely chopped 1 tbsp ginger garlic paste 1 large tomato,chopped 1/4 cream/coconut milk cilantro for garnishing 2 tbsp oil Spices: 1 tsp cinnamon powder 2 tbsp kasoori methi,crushed 1 tsp chili powder 1 tsp kashmiri mirch powder 1 tsp turmeric powder 1 tbsp coriander-cumin powder salt as per taste What you need to do Heat oil in a heavy bottomed pan.When warm, add cinnamon powder.Saute for 30 secs. Add the onions and some salt and cook till the onions are translucent. Now add the ginger garlic paste and cook for couple of mins until it's raw smell goes. Add in the tomato and cover and cook until it is mushy. Add the remaining spices and salt.Cover and cook till the mixture looses oil. Add in the mushrooms and cook covered for 10 mins or until the mushrooms are done. Add in the cream/coconut milk and again simmer for 5 mins. Turn off the heat and garnish with cilantro.
